Today we will be making Split Pea Soup. Split peas are packed with fiber, protein, vitamins such as B1, B5, K and so many others all while being fat free.
Aside from this dish being nutritious, it is warming and filling, making it a perfect meal for the cold winter days. With the expected snow this week, this would be a perfect time to make this soup. It is also a great dish for those who are seeking to stay away from meat or are vegetarian.
I do use chicken broth as my base, but you are welcome do to a vegetable broth instead. I hope it helps in keeping you warm this cold week.

Split Pea Soup

Ingredients
- 2 Pounds Split Peas
- 2 White Potatoes
- 2 Carrots
- 1 White or Yellow Onion
- 2 Cloves of Garlic
- Parsley
- Chicken or Vegetable Broth
- Olive Oil
Directions
- Step 1
- Chop your onion, garlic, and parsley finely. Set aside.
- Step 2
- Wash carrots and potatoes. Dice them and reserve.
- Step 3
- Rinse your split peas. Heat a pot for soup and add 2 tbsp of olive oil. Add your onions, garlic, split peas and salt to taste. Sautee for 2-3 minutes and then add your carrots and potatoes and continue sautee for another 1 minute and then add your chicken broth.
- Step 4
- Cover your pot, leave on low heat and let simmer for 60-80 minutes. The time does vary depending on your pot and stove so please make sure you do check on the soup periodically.
- Step 5
- When done cooking, remove from heat and serve.
- Step 6
- Sprinkle the parsley over the soup and enjoy.
