Sarandeado Shrimp or Camarones Sarandeados is a popular and quite delicious dish. There are many variations of this sauce depending on who is preparing it and where it is prepared.
Today I will share my recipe that I always prepare when I am home and there is a craving for this dish. Shrimp are low in calories, provide vitamins such as selenium and B12 and do not take long to cook, resulting in a perfect option for a healthy dish.

Boiling the Ancho Pepper

Ingredients
- 2 Pounds of Shrimp
- 4 Ancho Chiles
- 1 Can of Tomato Sauce 8 oz
- Mayonnaise
- 2 Lemons
- Soy sauce
- 2 Garlic Cloves
- 2 Zucchinis
Directions
- Step 1
- Clean and peel the shrimp.
- Step 2
- Butterfly the shrimp and season with salt. Set aside.
- Step 3
- Wash and slice the zucchinis. Season with salt and olive oil. Set aside.
- Step 4
- Put the ancho peppers to boil.
- Step 5
- When they are ready add the chiles into a blender with the tomato sauce, 2 tablespoons of mayonnaise, the juice of 2 limes, 1 tablespoon of soy sauce and the garlic cloves. Blend all the ingredients well. Set aside.
- Step 6
- Put the shrimp into a bowl with the sauce, mix and put in the refrigerator for 1 hour.
- Step 7
- Preheat the oven to 375 °F.
- Step 8
- Cover a baking pan with aluminum foil. Put the shrimp you have in the refrigerator on the foil paper with the sauce. In the pan, put the zucchini aside from the shrimp so they also bake.
- Step 9
- Bake for 8-12 minutes. Flip the shrimp halfway through so it cooks evenly on both sides.
- Step 10
- Time can vary depending on your oven so check in on shrimp. Remove once they have cooked.
- Step 11
- Serve with white or brown rice.
