Ranchero Steak is prepared with beef. Beef is a meat that has gotten a bit of a bad reputation and as a result it is avoided by many for health reasons, but this meat not only have nutritional benefits, but it contains vitamins like B12, zinc and iron. And to ensure that this dish remains healthy, we will choose a cut of beef that is low in fat. I will be using palomilla, this cut can be found at the meat department of La Bonita Supermarkets. I will be using palomilla for my recipe of Steak Ranchero/ Picado.
This recipe comes from my great grandmother and I have seen other variations of this delicious dish, but the one I will be sharing today is the one that was shared with me many years ago. This recipe uses serrano chiles which tends to be spicier than the jalapeño chile, so if you prefer less spice, reduce the number of chiles. Similarly, increase the number of chiles if you want more spice.

Ingredients
- 3 pounds of Palomilla
- 5-6 Tomatoes
- ½ White Onion
- 2 Serrano Chiles
- 1 Green Bell Pepper
- 1 Orange Bell Pepper
- 1 Red Bell Pepper
- 2 Garlic Cloves
- Olive Oil or Avocado
Directions
- Step 1
- Wash the tomatoes and serrano chiles.
- Step 2
- Bring the water to a boil and add the veggies. After they have cooked, remove from heat. Put this into a blender with the garlic and salt. Blend and set aside.
- Step 3
- Slice the palomilla (steak).
- Step 4
- Slice the onion. Slice the bell peppers as well. Set aside.
- Step 5
- Heat a skillet and add a tablespoon of olive or avocado oil.
- Step 6
- Add the palomilla to the skillet with salt and pepper.
- Step 7
- Add the onion and sauté for 10-12 minutes or when the meat begins to brown.
- Step 8
- Pour the sauce that was set aside over the meat and stir it with the steak. Cover the skillet for 5-6 minutes until the sauce has incorporated with the steak.
- Step 9
- Add the bell peppers and leave uncovered for 2 more minutes.
- Step 10
- Remove from heat.
- Step 11
- Serve with corn tortillas and enjoy!
