This Lentil and Longaniza Soup is perfect for the season because it is warm, filling and packed with nutrients. These legumes contain protein, fiber, folate and many other vitamins and minerals. We prepare this dish with our very own in house made longaniza, which I know many of you will question how healthy longaniza is. The benefit of our longaniza is that is made by hand in store with whole and fresh ingredients and no preservatives. Longaniza and lentils together make quite the tasty dish!

Lentil and Longaniza Soup

Ingredients
- 2 Cups of washed Lentils
- 1 lb of Longaniza w/out Chile
- 1 Cup of Diced Onions
- 1 Cup of Diced (fresh) Tomatoes
- 2 Diced Jalapenos (Seeds Removed)
- 2 Cups Washed Spinach
- 2 Tbsp of Olive Oil
- 2 Cloves of Garlic
- 6-8 Cups of Water
Directions
- Step 1
- In a large pot for soup heat 2 tbsp of olive oil.
- Step 2
- Add the onions, tomatoes, jalapenos and longaniza and add salt with the garlic.
- Step 3
- Break apart the longaniza in the pot and saute for about 5-6 minutes, until the vegetables have softened.
- Step 4
- Then add the lentils and continue to saute for another 4-5 minutes.
- Step 5
- After this, add 6-8 cups of water, depending on your soup preference.
- Step 6
- Add the spinach along with salt and cover the pot.
- Step 7
- Let the lentils simmer for about 20-30 minutes, until the lentils have fully cooked.
- Step 8
- Serve warm and enjoy!
