Huevos Rancheros!! This is quite possibly one of my favorite breakfasts. It has some of the most known and delicious flavors of Mexico such as the tortilla, jalapeño and tomato.
There are many variations of the sauce in this recipe, but mine is simple and easy to prepare. The tortillas in this recipe are fried and changing this part changes the flavor and textures of this dish so in an effort to make this recipe healthier, I will fry the tortillas in avocado oil. You can also opt for poaching the eggs instead of frying them to reduce calories.

Huevos Rancheros

Ingredients
- 2 Eggs
- 2 Corn Tortillas
- 3 Tomatoes
- 3 Jalapeno Peppers
- ½ White Onion
- Oregano
- 2 Cloves of Garlic
- 1 Avocado
- Avocado Oil
- Queso Fresco or Panela Cheese
Directions
- Step 1
- Slice the onion. Set aside.
- Step 2
- Put the tomatoes with the jalapeños to boil. When done cooking, remove from heat. Put them into a blender with 2 garlic cloves, a pinch of oregano and salt. Blend and set aside.
- Step 3
- Heat avocado oil in a frying pan and add the eggs with salt. Make the eggs sunny side up. Set aside.
- Step 4
- Into a pan, add the avocado oil and the sliced onions and leave for 1-2 minutes.
- Step 5
- Add the salsa you mixed. Stir the ingredients and leave for 2-3 minutes and remove from heat. Set aside.
- Step 6
- Fry the tortillas in avocado oil. When they are fried, put them on a plate. Put the eggs onto the tortillas, one egg over each tortilla. Pour the sauce over each egg.
- Step 7
- If desired, crumble queso fresco or Panela cheese over the sauce.
- Step 8
- Accompany with avocado.
