
We call these Huevos a la Mexicana and that translates to Mexican style eggs. They’re easy and fast to make, and they are delicious, especially with corn tortillas. I always serve them with corn tortillas and my family never seems to get enough of them. I hope you enjoy Huevos a la Mexicana as much as we do!

Chop white/brown onion, tomato and chili jalapeños.

Heat a skillet with olive or avocado oil and add the veggies you chopped.

After 1-2 minutes, once the veggies have softened, add eggs and salt.
Mix and let cook.

Once the eggs have cooked, remove from the heat and serve. Serve with corn tortillas.
