Today I will be making a Garbanzo Bean Salad that you can eat on its own or as a side dish. Garbanzo Bean like many other legumes are packed with nutrients. Research tells us that they are full of fiber, protein and have many minerals that help protect you from diseases such as diabetes, heart disease and cancer. They are also inexpensive making it affordable to feed us our families with a nutritious meal.

Garbanzo Bean Salad

Ingredients
- 2 Cans of Garbanzo Beans
- 3 Persian Cucumbers
- 2 Tomatoes
- ½ Purple Onion
- ½ Cup of Olive Oil
- ½ Juice of a Lemon
- 4 oz of Queso Fresco or Queso Crema
Directions
- Step 1
- Add the olive oil, juice of a lemon and salt into bowl and whisk. Set aside.
- Step 2
- Slice your cucumbers, tomatoes and onions. Set aside.
- Step 3
- Rinse the garbanzo beans under cold water.
- Step 4
- Put the garbanzo beans into a bowl, add your veggies along with your dressing and salt. Mix.
- Step 5
- Crumble your queso fresco or crema and add to the salad. Mix.
