Chicken Monterrey is delicious and easy to prepare. For people who cannot or opt out of eating dairy products, they can substitute the cheese with any type of vegetarian cheese. The chicken breast in this recipe can be found precut inside of La Bonita Supermarkets as chicken milanesa, just make sure it is not breaded. The milanesa is a thin cut chicken breast and helps with cooking time.

Chicken Monterrey

Ingredients
- Chicken Milanesa
- Monterey Cheese or Asadero
- 1 Green Bell Pepper
- 2 Tomatoes
- ½ White Onion
- 1 Avocado
- 1 Jalapeño
- 1 Green Lemon
- Avocado or Olive Oil
Directions
- Step 1
- Wash and dice the tomatoes, onion and avocado into small pieces. Also chop the jalapeño and remove the seed.
- Step 2
- Add your chopped veggies to a bowl and add salt with the juice of the lime. Stir and mix all the ingredients. Set aside your salsa.
- Step 3
- Chop the bell pepper into slices. Set them aside as well.
- Step 4
- Season the chicken fillets with salt and a little pepper on both sides. In a skillet put 1 tablespoon of avocado or olive oil. Then add the chicken milanesas and cook for 2-3 minutes on each side or until cooked.
- Step 5
- Pre heat your oven to 375°F.
- Step 6
- In an oven dish put aluminum foil and, on the aluminum, put the chicken fillets that you cooked. On each chicken milanesa breast put a few slices of bell pepper and then add the Monterrey or Asadero cheese over the peppers.
- Step 7
- Put the chicken milanesas in the oven for 5-7 minutes or until the cheese is melted.
- Step 8
- Place the hot chicken milanesas on a plate and put 1-2 tablespoons of the salsa that you set aside on the each milanesa.
- Step 9
- Accompany the dish with a brown or wild rice and enjoy!
