The story goes that this Café de Olla (pot coffee) with its beautiful flavors and aromas was born during the Mexican Revolutionary War (1910-1917) with the Adelitas, women Soldaderas, who would make this coffee to sustain the soldiers. They would make the coffee in an olla de barro, giving the coffee the name of Café de Olla. Today in Mexico, you can find this coffee and depending on the region you are in, there can be some variations with the spices.

Ingredients
4 cups of water
1 stick of whole cinnamon
2 cloves
1 star anise
1 cube of piloncillo, about 2-3 oz)
Preparation
Boil water accompanied with 1 stick of whole cinnamon, 2 cloves, 1 star anise, and 1 cube of piloncillo (about 2-3 oz). When the water is boiling, add 1 heaping tbsp of ground instant coffee. Once the coffee has dissolved, remove from the heat and strain before you serve.
It can be accompanied by a sweet Mexican bread or a dessert like some delicious Baked Pears
