Cactus was a staple food consumed by our ancestors. The Aztecs domesticated the nopal 9,000 years ago and named it nopalli, which in Nahuatl means tree that bears tunas.
The cactus apart from being a very significant plant of our ancestors is also a food that provides many nutritional benefits; some of these are anti-inflammatory, antiviral and anticancer. They also fight sugar, are high in fiber, and packed with antioxidants.

Cactus (Nopalitos) with Eggs

Ingredients
- 2 Eggs
- 1 pound of Nopales peeled (without thorns), cut and washed
- 1 chopped white onion
- 1 chopped tomato
- One Jalapeño Chile (Optional)
- Avocado oil
- Salt
Directions
- Step 1
- Bring the cactus to a boil with a ¼ of a white onion and salt to taste. Let the cactus boil for 15-20 minutes, until the cactus are tender. Drain the water and wash the cactus thoroughly until they have no more slime. Set them aside.
- Step 2
- In a skillet, add a tablespoon of avocado oil. Then add onion, tomato, and chopped jalapeño. If you do not want spice, skip the jalapeño and do not add it. Add the cactus. Sauté all the vegetables for 1-2 minutes and add 2 eggs with salt to taste. Cook the eggs and incorporate all ingredients and.

- Serve with corn tortillas or fruit.
