Broccoli and Potato Cakes

Ingredients
- 1 ½ Cup of Potato
- 2 Cups Broccoli
- 2 Eggs
- ½ Cup of Asadero or Monterrey Cheese
- Olive Oil or Avocado
Directions
- Step 1
- Wash, peel and chop the potatoes.
- Step 2
- Wash the broccoli and chop into small pieces.
- Step 3
- Bring water to a boil and add salt. When the water boiling, add the broccoli.
- Step 4
- Remove from the water after 5 minutes and set aside.
- Step 5
- To the same water, add the potatoes and let boil for 30-35 minutes or until soft.
- Step 6
- Put the potatoes into a bowl and add the cooked broccoli, eggs, cheese, and salt to taste. Mix all the ingredients with your hands. If you want to add more cheese, you can add ½ cup more.
- Step 7
- Mold the cakes with your hands.
- Step 8
- In a hot skillet, add 1 tablespoon of olive or avocado oil. Put the cakes into the pan and leave for 3-4 minutes on each side or until golden brown.
- Step 9
- Repeat this until all the cakes are done.
- Step 10
- Serve and enjoy!
