I like to make these boo enchiladas on Halloween because when there are small kids in the home, they seem to enjoy the Halloween themed food.I hope your kids enjoy these! Happy Halloween!
1. Put 2 pounds of tomatillos, 6-8 jalapeños to boil in water. Once it has boiled, add to a blender along with 3 cloves of garlic, 1 bunch of cilantro and salt to taste. Blend and set aside your salsa verde.
2. Start cooking your ground beef (around 2 pounds) and season to taste. Once the meat has browned and cooked thoroughly, set aside.
3. Add oil to a pan and make sure it’s heated. Once it’s warm, add a corn tortilla and fry on both sides. Make sure you only do about 3-5 seconds per side, you want to make sure the tortilla is still soft and not crunchy. You will repeat this step with all of your tortillas for your enchiladas.
4. Once you have finished frying your tortillas, you will take one tortilla and fill it with the ground beef you set aside, and then roll your tortilla into an enchilada. You will repeat this step with all of your tortillas until all of your enchilada are complete and you will add your enchiladas into an oven safe dish.
5. Once your enchiladas are assembled into an oven safe dish, you will pour the salsa verde you set aside over them. And then over the salsa verde, you will put shredded Monterrey cheese over them, add plenty of cheese so the enchiladas can be white and resemble ghosts.
6. Turn on your oven to broil, hi. Add your enchiladas and watch closely so the cheese does not burn, they should be ready in 2-3 minutes, depending on your oven. Once the cheese has melted, remove.
7. Add black sliced olives as the eyes and the mouth to the enchiladas. And serve with a salad!
