Battered Fish is a dish that you will see in many kitchens in Mexico and even more so in the season of Lent. It is said that the origin of this dish was born as a solution to a problem. Apparently at first, when frying the fish, it would get stuck to the bottom of the pan and then the fish would crumble. From this problem the solution was born; the recipe to batter the fish. This solution was great for all of us who now enjoy this tasty dish! Whenever I make this dish, I accompany this fish with a nopales (cactus) salad, I personally love the contrast of textures and the flavors of jalapenos and tomatoes, I find are perfect for this plate. But if you can always choose your own accompaniments to this dish.

Battered Fish

Ingredients
- 2 pounds of Tilapia
- 3 eggs
- 2 Tablespoon of Flour
- 1 Tablespoon Baking Powder
- 1 Pinch of Dried Oregano
- 4 Cups of Cooked Nopales
- 2 Tomatoes
- ½ Purple or White Onion
- 3 Jalapeño Peppers
- 1 Bunch of Cilantro
- Avocado or Canola Oil
Directions
- Step 1
- Season your tilapia filets with salt and pepper and set aside.
- Step 2
- Chop cooked cactus (nopales) into strips. Also chop the tomatoes, onion, jalapeños, and cilantro. Put this in a bowl with the nopales. Add salt to taste and mix. Set aside.
- Step 3
- Separate the egg whites and put them in a bowl. Beat them at high speed until peaks form. While continuing to beat, add the flour, baking powder, and a pinch of oregano. Beat until everything is incorporated.
- Step 4
- Heat avocado or canola oil in a frying pan.
- Step 5
- Add the fish fillets to the batter and coat both sides of the fish. Put them immediately into the pan and fry on both sides until golden brown.
- Step 6
- Remove and place them on a plate with a napkin to allow them to drain a bit.
- Step 7
- Serve the fish with the cactus salad.
