Let us get into a little bit about adobe before we go to the Chicken Adobo Tacos. Adobe is a sauce that we prepare to marinate meats and it is said that its origins are Spanish and with the conquest and arrival of the Spanish in Mexico, this sauce also arrived. During this time, it was also used to preserve meats since there was no refrigeration.
Nowadays, we continue to prepare this marinade, but today we only do it for the delicious flavor it gives to our meats. This marinade has 2 types of chili peppers and there are several studies that tell us that consuming chili is healthy because they contain vitamin C, A and help stop inflammation. It looks like eating chile peppers has its benefits. So, today we will be preparing the chicken adobo that will leave us some delicious chicken adobo tacos.

Chicken Adobo Tacos

Ingredients
- Chicken Thighs
- 4 Guajillo Chiles
- 3 Ancho Chiles
- 2 Garlic Cloves
- 2 tablespoons apple cider vinegar
- 2 Tablespoons of Orange Juice
- A pinch of Oregano
Directions
- Step 1
- Remove the stems from the dried chiles and slice them to remove the seeds.
- Step 2
- Put the chiles to boil in 2 cups of water. When they are soft, remove from the heat and add the chiles with the water where they were cooked into a blender.
- Step 3
- Add the garlic, apple cider vinegar, orange juice, a pinch of oregano, and salt to taste. Blend well until all the ingredients are well incorporated and it becomes your sauce. Set aside.
- Step 4
- Chop the chicken thighs for tacos. Pour your adobo marinade over the chicken.
- Step 5
- Cover your marinated chicken and refrigerate for 2-3 hours.
- Step 6
- Then heat oil in a frying pan and put your marinated chicken to cook and when the chicken is cooked remove from heat.
- Step 7
- Heat corn tortillas and form your tacos.
- Step 8
- Serve with onion, cilantro, lemon and radishes.
