Jalapeño Stuffed Tuna is a meal that has many healthy benefits. Tuna is high and protein and full of omega-3 fatty acids. There are studies stating that fatty acids can help us reduce the risk of heart disease, stroke and mental conditions such as dementia and depression. The Jalapeños are rich in vitamins A, C, K and B and contain potassium.
We will be using canned tuna for this recipe and I will be recommending canned tuna in water and not oil to avoid any unnecessary calories. I also will be using jalapeños and with jalapeños you never know just how spicy each one will be. If you do not want to risk the spiciness use any other kind of pepper you are comfortable with.

Jalapeño Stuffed Tuna

Ingredients
- 2 cans of Tuna in Water
- ½ White Onion
- 2 Tomatoes
- 1 Carrot
- 10-12 Jalapeños
- 1 Lime
- 5 Tbsp. of Mayonnaise
- Grated Asadero or Monterrey Cheese
Directions
- Step 1
- Wash your jalapeños. Slice them in halves and remove the seeds and veins. Set aside.
- Step 2
- Wash and dice your tomatoes and onions. Then grate the carrot. Set all aside.
- Step 3
- Into a bowl, add the cans of tuna after straining the water from them along with your chopped veggies, mayonnaise and salt to taste.
- Step 4
- Squeeze the juice of lime into the bowl.
- Step 5
- Mix and set aside.
- Step 6
- Pre heat your oven to 400 °F.
- Step 7
- Put the jalapeño halves onto a baking sheet.
- Step 8
- Scoop your tuna mix into each jalapeno half.
- Step 9
- Sprinkle your asadero cheese over each jalapeno and out into the oven.
- Step 10
- Bake for 10-15 minutes or until cheese has melted.
- Step 11
- Remove from oven and serve.
