Today we will prepare a salad with marinated chicken which is tasty and packs a mighty crunch with so many different veggies. I use marinated adobo chicken for this recipe because this chicken adds a lot of flavor.
The adobo chicken can be found in the meat department inside La Bonita Supermarkets. I like to use it because on days where I do not have enough time to make my own, this chicken is a saver. But I know that many of you will have your own adobo recipe and if you prefer to use yours, please feel free to. This salad is light, easy to prepare and very satisfying.

Marinated Chicken Salad

Ingredients
- Marinated Adobo Chicken
- 1 Romaine Lettuce
- ¼ Red Cabbage
- 1 Bunch of Radishes
- 1 Yellow Bell Pepper,
- 1 Naranjo Color Bell Pepper
- 1 Green Bell Pepper
- 1 Tomato
- 1 Bunch of Cilantro
- 1 Jalapeño
- 1 Avocado
- 4 oz of Yogurt
- Avocado Oil
- Olive Oil
Directions
- Step 1
- Chop your chicken and sauté with a tablespoon of avocado oil. When the chicken has cooked, remove it from the heat and set aside.
- Step 2
- Wash the lettuce and cabbage and chop both for the salad.
- Step 3
- Clean the radishes, bell peppers, avocado, tomato and chop for the salad.
- Step 4
- Add these vegetables to a bowl along with the chicken that you set aside.
- Step 5
- Wash, chop and remove the seeds from the jalapeño pepper.
- Step 6
- Clean and put half of the cilantro bunch in a blender.
- Step 7
- Add the jalapeno pepper, yogurt, a tablespoon of olive oil and salt, mix. This will be your dressing.
- Step 8
- Pour your dressing over the salad and enjoy!
