Winter is the perfect season for soups and today I will be sharing with you my albondigas recipe. Albondigas is a meatball soup that has a few variations as it can be made with ground chicken, turkey, pork or beef. Today I used ground pork since that is what I had on hand but you can use whatever meat you would like to. This is the perfect dish to keep your family warm during the cold. Enjoy!

Albondigas

Ingredients
- 3 lbs ground Pork
- 1/2 cup of Rice
- 1 Egg
- 1/2 Onion
- 1 Tomato
- fresh Spearmint
- Potatoes
- Chayotes
- Carrots
- 1bunch of cilantro
- Salt to taste
Directions
- Step 1
- Put 3 pounds of ground pork, ½ cup of rice, 1 egg and salt to taste into a bowl.
- Step 2
- Chop ½ onion, 1 tomato and fresh spearmint and add this to the meat. Wash your hands thoroughly and mix all of the ingredients into the meat. Afterwards, form the meatballs with your hands.
- Step 3
- Chop potatoes, chayotes and carrots and set aside.
- Step 4
- In a pot big enough for soup, fill with water and put to boil.
- Step 5
- Blend 1 tomato, ½ onion and salt to taste, add this to the pot.
- Step 6
- Add the meatballs and chayotes.
- Step 7
- After about 20-25 minutes add the potato, carrots and 1 bunch of cilantro and let it boil for another 25-30 minutes.
- Step 8
- Then remove from the heat and serve.
- Step 9
- Serve with lime and corn tortillas and enjoy!
